Okra is a favorite at
my house and with
Al Wadi Al Akhdar its
easy to concoct this Mezze dish. Sauté two finely chopped onions
in 1/4 cup olive oil until soft. Add three finely chopped, peeled tomatoes sprinkled with 1/2 teaspoon salt and cook until thick. Then drain the baby
okra, add to the onions and tomatoes
and heat through. Stir in a little lemon juice to taste. You also might like to try a little
hot pepper.
Serve cold.
