is vital for Hommos Tahina and Baba Ghannouge.
It is also the major ingredient to make the popular Taratour sauce
for fish. Just mix some crushed garlic with a little salt. Add the tahina, and the juice of one to two lemon, mix well until the blend is soft. You can add a tablespoon or two of water.
