Halloumi Cheese Rolls Recipe2017-01-11

- 3 Sheets, Al Wadi Al Akhdar Pastry Sheets, thawed
- Fresh thyme leaves
- 5 Tbsp (60 g) Al Wadi Al Akhdar Butter, melted
- 400 g Halloumi Cheese, cut into 16 logs
Preheat oven to 180C.
Unfold pastry sheets and cut as instructed on the back of the pack into even size rectangles.
Place 1 sheet on the work surface and cover the rest with a damp towel to prevent from drying.
Brush generously with butter, ensuring that some butter is saved to brush the tops.
Sprinkle some thyme leaves along each pastry sheet and place a Halloumi log.
Roll the sheet over the Halloumi in order to encase it.
Place on a baking tray lined with baking paper and brush with remaining butter. Bake for 15-20 mins or until golden.
N.B. Filled rolls keep really well in the freezer for up to 1 month. You could double or triple the recipe in order to avoid waste and store in the freezer in zipper lock bags until needed.
