Maamoul with Dates

Maamoul with Dates

Traditional Lebanese pastry filled with dates and served on Easter and Eid.


  • The dough:
  • 900g Semolina
  • 150g Of ferkha
  • 450g Of Al Wadi Al Akhdar butter, melted
  • 125ml Of Al Wadi Al Akhdar rose water
  • 50ml Of Al Wadi Al Akhdar orange blossom water
  • 150g Of caster sugar

  • Date filling:
  • 250g Dates, pitted
  • 1 Bsp butter, melted
  • 1/4 Tsp nutmeg

Step 1

Sift semolina and ferkha together.

Step 2

Add sugar.

Step 3

Add melted butter and rub with hands until well combined.

Step 4

Slowly add warm orange blossom water and rose water, kneading and working the dough gently. Place the dough in a deep container and cover with a wet kitchen towel. Let it sit for 7 hours. Dough should be knead a couple of times during this time.

Step 5

To make the filling, combine all ingredients (you can use a food processor).

Step 6

Divide the dough in 2 and roll out each half in a long thin snake like form. Cut circles of 1 inch each, flatten it on the palm of your hand, fill it with dates and make a ball. Repeat this step until you finish the dough.

Step 7

Press each ball into a traditional “Maamoul” mold to take shape and place it on the baking sheet. If the dough is sticky, lightly flour the mold.

Step 8

In a preheated oven 200C/400F bake the maamoul cookies for about 20 minutes or until the sides are slightly golden. Cool then sprinkle with powdered sugar and serve.
