Gingerbread

Traditional Christmas dessert recipe, prepared with a variety of spices.

Ingredients

  • ½ cup Al Wadi Al Akhdar honey
  • ½ cup brown sugar
  • 2 tbsp butter
  • 1 cup milk

  • 2 cups plain flour
  • 2 tsp bicarbonate of soda, mixed in 1 tbsp warm water
  • 2 tsp ground anise
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground clove
  • 1 tsp ground nutmeg

  • 2 eggs

Step 1

Heat the oven to 180°C /350°F. Coat a cake pan with butter and dust with flour, tapping out the excess; set aside.

Step 2

In a small saucepan, whisk in honey, butter, sugar and milk over low heat. When well combined, remove from heat and cool aside. Don’t let it boil.

Step 3

Mix all the dry ingredients.

Step 4

Whisk the eggs in the honey mixture and pour over the dry ingredients, beating constantly at low speed, to form a smooth batter.

Step 5

Transfer the batter to the prepared pan and bake 40 to 45 minutes or until risen and a toothpick inserted into the center of the cake comes out clean.

Step 6

Allow the cake to cool on a rack for at least 20 minutes.
