- For the Base
- 500g Digestive biscuits
- 75g Al Wadi Al Akhdar unsalted butter
- For the Filling
- 800g Cream cheese
- 1L Fresh cream
- 200g Icing sugar
- 5g Vanilla powder
- Zest of 1 lemon
- For the Topping
- 350g Of your favorite Al Wadi Al Akhdar Jam
Crush the biscuits in a blender. Melt the butter and mix it with the biscuit crumbs.
Press the butter and biscuit mixture into the bottom of a pan.
Bake in the oven for 5 minutes and keep aside to cool.
Beat the cream cheese until soft. Then add the lemon zest and vanilla powder and mix to homogenize.
Meanwhile, prepare the whipped cream by gradually adding the icing sugar to the fresh cream and whip.
Add the cheese mixture to the whipped cream and mix slowly to form the filling.
Pour the filling on top of the crust and refrigerate for about 2 hours until set.
Top with your favorite Al Wadi Al Akhdar Jam or with Al Wadi Al Akdar Sour Cherries.
Serve Cold. For chocolate cheesecake, blend 100gr of cocoa powder into the cheese filling.
