Minestrone Soup with Stellini

Vegetarian soup with diced veggies and Al Wadi Al Akhdar stellini.


  • 1 Cup Al Wadi Al Akhdar extra virgin olive oil
  • 120g Onion diced
  • 5 Garlic cloves finely chopped
  • 750g Peeled potato cubes (cut into 1- inch pieces)
  • 900g Carrots diced
  • 200g Celery diced
  • 200g Leek diced
  • 250g Cubes of zucchini
  • 250g Fresh green beans trimmed
  • 2L Vegetable stock
  • 250g Peeled tomatoes
  • ½ Tsp salt
  • 1/4 Tsp black pepper
  • 500g Al Wadi Al Akhdar stellini

Step 1

Heat the olive oil in large saucepan.

Step 2

Add the onion, garlic cloves, and fry for 2 minutes then stir in cubed potatoes, carrots, celery and leek.

Step 3

Fry for 2 minutes longer, stirring the vegetables occasionally.

Step 4

Add the zucchinis, fresh green beans and cook for a minute longer.

Step 5

Add the vegetable stock to cover all the vegetables over medium heat, stirring frequently for 7 minutes.

Step 6

Add peeled tomatoes and season to taste with salt and black pepper.

Step 7

Bring to a boil, lower the heat and simmer.

Step 8

Cover for half an hour.

Step 9

Add the Stellini pasta and bring to boil for 8 minutes.
