Kishk Porridge

Ingredients
- 2 Tbsp Al Wadi Al Akhdar olive oil
- 1 Tbsp Al Wadi Al Akhdar butter
- 1 Medium onion, chopped
- 2 Cloves garlic, crushed
- 1/2 Kg lamb, ground
- 1 Cup kishk
- 2 Tbsp pine nuts, toasted
- 4 Cups water
- Salt to taste
- ½ Tsp white pepper
Step 1
In a pan, heat olive oil then melt the butter. Add the onions and sauté until soft and golden.
Step 2
Add meat to the pan and cook for 10 minutes. Add chopped garlic and cook for another 3 - 5 minutes.
Step 3
Lower the heat, add kishk, pine nuts and water and stir well. Season with salt and white pepper.
Step 4
Stir thoroughly. Cook until the soup is thickened.

Kishik is mostly found in ethnic and middle eastern pantry shops.
