Asparagus Soup

Easy-to-prepare soup recipe with Al Wadi Al Akhdar Asparagus.


  • 1 Medium onion, chopped
  • 1 Garlic clove, crushed
  • 10g / 1 Tbsp butter
  • 330g Al Wadi Al Akhdar Green Asparagus jar, cut in 2
  • 1 Cup milk
  • 4 Cups chicken stock
  • Salt and pepper, to taste
  • Handful of Parsley, to garnish

Step 1

In a large saucepan melt the butter. Add onion and garlic, and cook until the onion has softened.

Step 2

Add the asparagus and cook for 1-2 minutes. Stir in the stock. Season to taste. Cover and simmer for about 10 minutes or until asparagus are tender.

Step 3

Remove from heat, and blend with a hand stick blender.

Step 4

Transfer to a clean saucepan, add the milk and cook for another 5 minutes.

Step 5

Garnish with asparagus tips. Serve!
