The Lebanese salad, made easily with Al Wadi pulp of grilled eggplant.


  • 1 Jar 480g Al Wadi Al Akhdar Pulp of Grilled Eggplant
  • 1 Cup Lemon Juice
  • 1 Cup Al Wadi Al Akhdar Extra Virgin Olive Oil
  • 1/4 Tsp Salt
  • 2 Medium Tomatoes, diced
  • 1 Green Bell Pepper, diced
  • 1/2 Cup Green Onions, diced
  • 1/2 Cup Parsley, chopped

Step 1

To make the dressing, combine the lemon juice with the olive oil and salt.

Step 2

In a salad bowl, mix the pulp of eggplant with half of the dressing.

Step 3

Toss in the tomatoes, green bell pepper and green onions and sprinkle with parsley.

Step 4

Finally, drizzle with the rest of the dressing and serve.
