Kashkaval & Olive Salmon Steak2015-07-20

- 800g Salmon steaks
- 2 Cups orange juice
- 1 Tbsp brown sugar
- 2 Tbsp vodka (optional)
- Sea salt and black pepper, to taste
- 1 Tbsp rosemary
- 2 Sprigs of fresh thyme
- 400g Tagliatelle
- 1 Cup Al Wadi Al Akhdar Kashkaval Cheese, grated
- 3 Tbsp black olive paste
- 1/2 Cup Mozarella Cheese
- 2 Tbsp Fresh Basil, chopped
- 3 Tbsp Al Wadi Al Akhdar Extra Virgin Olive Oil
In an oven dish, place salmon steaks as one layer. Drizzle with orange juice and vodka. Season with salt, pepper and rosemary. Push the thyme into the score marks of the fish and sprinkle with sugar. Refrigerate for 1 hour.
Cook Tagliatelle in boiling water, according to pack instructions.
Combine Kashkaval and Mozzarella cheese, olive paste, basil and olive oil, and mix until smooth.
Preheat grill to medium-high and lightly grease. Cook the salmon for 5 minutes on one side and about 1 minute on the other side.
Top the salmon with the kashkaval and olive sauce, and serve with tagliatelle.
