Coconut Shrimp with Stir Fry Vegetables

International shrimp recipe with fish sauce and coconut milk.


  • 1 Tsp sunflower oil
  • 1 Onion, sliced
  • 2 Cloves garlic, minced
  • 1kg Shrimp, peeled and deveined
  • 1 Tsp curry powder
  • 1 Can light coconut milk
  • 2 Tsp fish sauce
  • 1 Tbsp sesame oil
  • 1 Frozen pack of Al Wadi Al Akhdar Stir-Fry vegetables, 450g
  • 1/4 Cup fresh coriander, chopped
  • Salt to taste

Step 1

In large nonstick skillet, heat oil on medium-high, add onion and garlic and cook for 1-2 minutes.

Step 2

Add shrimps and curry and cook for about 3 minutes. Add coconut milk and fish sauce, combine well.

Simmer for about 3 minutes or until shrimps are cooked.

Remove from heat and set aside.

Step 3

In a wok, heat the sesame oil and add the Stir Fry vegetables, season with salt and sauté for about 5 minutes.

Add the shrimp mix to the vegetables and combine.

Step 4

Sprinkle with coriander and serve over rice.
