Coconut Shrimp with Stir Fry Vegetables2015-07-20

- 1 Tsp sunflower oil
- 1 Onion, sliced
- 2 Cloves garlic, minced
- 1kg Shrimp, peeled and deveined
- 1 Tsp curry powder
- 1 Can light coconut milk
- 2 Tsp fish sauce
- 1 Tbsp sesame oil
- 1 Frozen pack of Al Wadi Al Akhdar Stir-Fry vegetables, 450g
- 1/4 Cup fresh coriander, chopped
- Salt to taste
In large nonstick skillet, heat oil on medium-high, add onion and garlic and cook for 1-2 minutes.
Add shrimps and curry and cook for about 3 minutes. Add coconut milk and fish sauce, combine well.
Simmer for about 3 minutes or until shrimps are cooked.
Remove from heat and set aside.
In a wok, heat the sesame oil and add the Stir Fry vegetables, season with salt and sauté for about 5 minutes.
Add the shrimp mix to the vegetables and combine.
Sprinkle with coriander and serve over rice.
