Chicken Biryani

Classic Indian chicken recipe, rich in spices and flavor.

Ingredients

  • 1kg Chicken Pieces
  • 1½ Cup yogurt (plain)
  • 1 Tbsp ginger, minced
  • 1 Tsp chili flakes
  • 3 Tbsp Al Wadi Al Akhdar passata
  • 1 Tsp turmeric powder
  • 1 Tsp cumin powder
  • 1 Tsp coriander seeds
  • 1 Tsp garam masala
  • 5 Cardamom
  • Salt to taste
  • 4 Tbsp Oil
  • 5 Cloves of garlic, crushed
  • 3 Sliced onion
  • 2 Cups Basmati Rice
  • 4 Cups water
  • ½ Cup milk
  • ½ Tsp saffron
  • 2 Tbsp Green Coriander Leaves

Directions

Step 1

Marinate chicken with yogurt, ginger, chili flakes, passata, turmeric, cumin, coriander, garam masala, cardamom and salt for at least 3 hours.

Step 2

In a pan, heat oil and fry onions and garlic until browned.

Step 3

Add the chicken pieces and cook on all sides until tender.

Step 4

In a separate large pan, bring the water to a boil and add Basmati rice. Mix saffron in milk and add it to the rice. Cook rice on a low heat.

Step 5

When rice is cooked, mix in gently the chicken pieces.

Step 6

Garnish with green coriander leaves and serve hot.
