Beef Kebabs with Orange Couscous2015-10-06

- 450g Beef cubes
- 1 Tbsp Al Wadi Al Akhdar extra virgin olive oil
- 1 Clove garlic, minced
- 1 Tsp ground ginger
- 1 Tsp cinnamon
- 1 Tsp ground coriander
- Salt, to taste
- 2 Oranges, divided into segments
- 1 Cup / 250g couscous
- ½ Cup fresh orange juice
- 2 Tbsp fresh coriander, chopped
- 4 Tbsp Al Wadi Al Akhdar pomegranate glaze, to drizzle
Soak wooden skewers for at least half an hour in water.
Combine olive oil, garlic, ginger, cinnamon, coriander and salt. Brush beef cubes pieces with the mixture and marinate for half an hour.
Thread the beef cubes into the skewers and grill for 5-7mn on each side or until cooked.
Make the couscous according to packet instructions and drizzle with orange juice. Fluff up with a fork and add the orange segments.
Transfer to plates and serve with the beef kebabs. Sprinkle with coriander leaves and drizzle pomegranate glaze.
