Beef Kebabs with Orange Couscous

Beef kebabs with orange couscous
    A Mediterranean recipe topped with Al Wadi Al Akhdar pomegranate glaze.


    • 450g Beef cubes
    • 1 Tbsp Al Wadi Al Akhdar extra virgin olive oil
    • 1 Clove garlic, minced
    • 1 Tsp ground ginger
    • 1 Tsp cinnamon
    • 1 Tsp ground coriander
    • Salt, to taste
    • 2 Oranges, divided into segments
    • 1 Cup / 250g couscous
    • ½ Cup fresh orange juice
    • 2 Tbsp fresh coriander, chopped
    • 4 Tbsp Al Wadi Al Akhdar pomegranate glaze, to drizzle

    Step 1

    Soak wooden skewers for at least half an hour in water.

    Step 2

    Combine olive oil, garlic, ginger, cinnamon, coriander and salt. Brush beef cubes pieces with the mixture and marinate for half an hour.

    Step 3

    Thread the beef cubes into the skewers and grill for 5-7mn on each side or until cooked.

    Step 4

    Make the couscous according to packet instructions and drizzle with orange juice. Fluff up with a fork and add the orange segments.

    Step 5

    Transfer to plates and serve with the beef kebabs. Sprinkle with coriander leaves and drizzle pomegranate glaze.
