Okra with Oil, Bell Pepper and Chili

A very special recipe of Okra in oil with a twist of Bell Peppers & Hot Chili Green Peppers!


  • 1 bag of frozen Okra
  • 1 bunch of fresh coriander
  • 3 garlic cloves
  • 1 big onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 fresh green chili pepper
  • 1 tsp of garlic pepper
  • Pinch of pepper
  • Pinch of cumin
  • 1 spoon of salt
  • ½ cup of Al Wadi Al Akhdar olive oil
  • 2 cans of Al Wadi Al Akhdar diced tomatoes

Step 1

Heat the vegetable oil in a pan. Once the oil is hot, add the okra from Al Wadi Al Akhdar and fry it. Chop the onion and fry it with a spoon of oil in a cooking tray. Add the garlic and fry it. Add the peeled and sliced tomatoes from Al Wadi Al Akhdar. When they are well cooked, add the chopped green and red bell peppers with the fried okra. Add the salt and spices, cook and simmer the mix. When cooked, add the chopped coriander leaves and leave for 5 minutes. Pour the mix with a squeeze of lemon.

Tips: To preserve the shape of the okra, do not over cook it.
