Okra Parmigiana

Battered okra covered in plenty of tomato sauce and melted cheese. Simply exquisite!

Ingredients

  • 2 tbsp of Al Wadi Al Akhdar Olive Oil
  • 1 cup of diced onions
  • ½ cup of diced celery
  • 2 garlic cloves, minced
  • ½ tsp of dried oregano
  • 400 g of Al Wadi Al Akhdar Diced Tomatoes
  • 170 g of Al Wadi Al Akhdar Tomato Passata
  • 1 tsp of sugar
  • Salt & pepper, to taste
  • ¼ cup of chopped fresh parsley
  • 2 eggs, lightly beaten
  • 800 g of Al Wadi Al Akhdar Frozen Okra
  • ¼ cup of all-purpose flour
  • 1 cup of seasoned bread crumbs
  • 1 ½ cup of shredded Mozarella cheese
  • ⅓ cup of freshly grated Parmesan cheese

Step 1

Preheat oven to 170 degrees and lightly spray a 20x20 cm square baking dish with cooking spray.

Step 2

In a large skillet, heat olive oil over medium-high heat. Add onion and celery and sauté for 3 to 4 minutes. Add garlic and sauté another 2 to 3 minutes. Add oregano.

Step 3

Stir in diced tomatoes, tomato paste, and sugar. Season to taste with salt and pepper. Reduce heat to low and simmer for 20 minutes, stirring occasionally. Add parsley. Sauce will be thick. You can add a little water if you wish to thin it some.

Step 4

Combine bread crumbs and flour in a pie plate. Dip okra pods in egg and then roll in bread crumb mixture to coat.

Step 5

Add half the okra and brown on both sides, about 3 minutes per side. (Okra will burn easily. Turn heat down some if it is browning too quickly). Drain on paper towels and immediately season the okra with some salt. Add more oil to skillet and cook remaining okra.

TIP:

The tomato sauce can be prepared ahead of time and stored in the freezer until ready to use.
