Lentil Salad with Green Broad Beans

This salad is packed with nutrients to keep your body fueled for the whole day.


  • 1 tbsp of Al Wadi Al Akhdar Olive Oil
  • 400g of Al Wadi Al Akhdar Frozen Green Broad Beans
  • 1 cup of chopped green onions
  • ½ bunch of coriander leaves
  • 1 bunch of parsley leaves
  • Pinch of salt
  • 1 tbsp of turmeric
  • Pinch of black pepper
  • 1 cup of boiled lentils
  • Dressing:
  • 5 tbsp of lemon juice
  • 2 tbsp of Al Wadi Al Akhdar Balsamic Vinegar
  • 10 tbsp of Al Wadi Al Akhdar Olive Oil
  • Pinch of salt

Step 1

Sautee the green broad beans with olive oil then add 1 tbsp of turmeric and remove from heat

Step 2

Add to the green broad beans the lentils, then onions, coriander, parsley, salt, pepper, and turmeric.

Step 3

Mix dressing ingredients.

Step 4

Finally add the dressing, mix and serve.


Lentils can be replaced with couscous or quinoa.
