- 1 onion, chopped
- ½ cup of rolled oats
- ½ cup of fresh spinach
- 260 g of Al Wadi Al Akhdar Canned White Beans
- ½ cup of fresh parsley
- ½ cup of fresh basil leaves
- 2 cups of Al Wadi Al Akhdar Frozen Green Peas
- Salt & pepper, to taste
- Al Wadi Al Akhdar Olive Oil
- 4 pieces of fresh Mozarella cheese
- 4 burger bread rolls
- 4 tbsp of sun-dried tomatoes
- 1 avocado, sliced
- Fresh spinach or lettuce
In a food processor blend the onion with the oats.
Add the rest of the ingredients for the patties: the fresh leafy greens, the white beans, the peas and seasoning. Blend until you get a sticky, smooth green mixture.
Shape the mixture into burger patties.
Heat a non-stick pan to medium heat, drizzle just a little bit of olive oil and place the patties in the pan, cooking each side for 4-5 minutes. When one side is cooked and you flip the patties, place a slice of mozzarella on top and cover with a lid while the other side is cooking, to allow the Mozarella to melt.
Serve the patties in a burger with fresh spinach or other salad greens, sun-dried tomatoes and avocado.
You can prepare a big batch of patties and store in the freezer.
