Artichoke soup with Parmesan crisps

  • 800g of Al Wadi Al Akhdar frozen artichoke bottoms
  • 1 onion cut into 4 pieces
  • ½ pc of leek, chopped
  • 1.5L of chicken broth
  • 1 potato, chopped
  • 2 tbsp Al Wadi Al Akhdar olive oil
  • Pinch of salt, pinch of white pepper, pinch of black pepper
  • ½ cup of fresh cream
  • 200g Parmesan cheese

Step 1

Sautee all the vegetables in olive oil for 7-8 minutes

Step 2

Add the chicken stock and stir

Step 3

Add salt, white pepper and black pepper and keep to boil at very low heat for 20 minutes

Step 4

Blend all the ingredients using a mixer

Step 5

Add ½ cup of fresh cream and stir

Step 6

Prepare parmesan crisps: a. On a baking tray, add baking sheets b. Add the parmesan on a baking sheet in different forms c. Bake at 180 C for 8-10 mns

Step 7

Serve the soup with parmesan crisps on the side.

Tips: You can use coconut milk instead of Fresh cream.
