Halloumi Cheese Rolls Recipe

An appetizer like no other. So easy and delicious! Cheese Rolls prepared using Al Wadi Al Akhdar Pastry Sheets; filled with halloumi cheese & thyme leaves, brushed with butter and baked for a crispy texture and a succulent taste.


  • 3 Sheets, Al Wadi Al Akhdar Pastry Sheets, thawed
  • Fresh thyme leaves
  • 5 Tbsp (60 g) Al Wadi Al Akhdar Butter, melted
  • 400 g Halloumi Cheese, cut into 16 logs

Step 1

Preheat oven to 180C.

Step 2

Unfold pastry sheets and cut as instructed on the back of the pack into even size rectangles.

Step 3

Place 1 sheet on the work surface and cover the rest with a damp towel to prevent from drying.

Step 4

Brush generously with butter, ensuring that some butter is saved to brush the tops.

Step 5

Sprinkle some thyme leaves along each pastry sheet and place a Halloumi log.

Step 6

Roll the sheet over the Halloumi in order to encase it.

Step 7

Place on a baking tray lined with baking paper and brush with remaining butter. Bake for 15-20 mins or until golden.

N.B. Filled rolls keep really well in the freezer for up to 1 month. You could double or triple the recipe in order to avoid waste and store in the freezer in zipper lock bags until needed.
