Thyme Crusted Lamb Chops with Caramelized Pineapple2015-07-20

- 6 Lamb chops
- 1/2 Cup breadcrumb
- 1 Cup fresh thyme, washed and picked
- 1 Tbsp parsley, coarsely chopped
- Salt & Pepper, to taste
- 3 Tbsp Dijon mustard
- 1 Tbsp Al Wadi Al Akhdar olive oil
- 2 Tbsp Al Wadi Al Akhdar apple vinegar
- 1 Tbsp Al Wadi Al Akhdar butter
- 1 Can / 567g Al Wadi Al Akhdar sliced pineapples, each slice cut in 4
- 4 Cloves (optional)
- 1/2 Cup sugar
In a shallow dish place breadcrumb, thyme leaves, parsley, salt and pepper and mix together.
Rub the sides of lamb chops with mustard and coat with the breadcrumb mixture.
Heat olive oil in a nonstick skillet over medium-high heat.
Place the lamb chops in the skillet to cook for 1 minute on each side. Drizzle with apple vinegar then over and cook for further 3 minutes on each side or to the desired degree of doneness.
Meantime, melt butter in a large nonstick skillet over high heat.
Place pineapples and cloves in the skillet and cover with sugar.
Cook on both sides, shaking often until sugar turns golden and caramelizes.
Finally, transfer lamb chops to plates, garnish with fresh thyme leaves and serve hot with the caramelized pineapples.
