Thyme Crusted Lamb Chops with caramelized Pineapple

A great choice for a dinner party main course to offer a sweet taste!

Ingredients

  • 6 Lamb chops
  • 1/2 Cup breadcrumb
  • 1 Cup fresh thyme, washed and picked
  • 1 Tbsp parsley, coarsely chopped
  • Salt & Pepper, to taste
  • 3 Tbsp Dijon mustard
  • 1 Tbsp Al Wadi Al Akhdar olive oil
  • 2 Tbsp Al Wadi Al Akhdar apple vinegar
  • 1 Tbsp Al Wadi Al Akhdar butter
  • 1 Can / 567g Al Wadi Al Akhdar sliced pineapples, each slice cut in 4
  • 4 Cloves (optional)
  • 1/2 Cup sugar

Step 1

In a shallow dish place breadcrumb, thyme leaves, parsley, salt and pepper and mix together.

Step 2

Rub the sides of lamb chops with mustard and coat with the breadcrumb mixture.

Step 3

Heat olive oil in a nonstick skillet over medium-high heat.

Step 4

Place the lamb chops in the skillet to cook for 1 minute on each side. Drizzle with apple vinegar then over and cook for further 3 minutes on each side or to the desired degree of doneness.

Step 5

Meantime, melt butter in a large nonstick skillet over high heat.

Step 6

Place pineapples and cloves in the skillet and cover with sugar.

Step 7

Cook on both sides, shaking often until sugar turns golden and caramelizes.

Step 8

Finally, transfer lamb chops to plates, garnish with fresh thyme leaves and serve hot with the caramelized pineapples.
