Seafood Paella

Spain’s national dish, made with Al Wadi Al Akhdar special touch.

Ingredients

  • 2 Tbsp oil
  • 3 Garlic cloves, minced
  • 1 Large onion, chopped
  • 1 Green pepper, chopped
  • 1/2 Red capsicum, chopped
  • 1/2 green capsicum, chopped
  • 350g Al Wadi Al Akhdar diced tomatoes
  • 450g Al Wadi Al Akhdar frozen green peas
  • 4½ Cups chicken stock
  • 2 Cups long grain rice
  • 1/2 Tsp saffron powder
  • 1/2 Tsp paprika
  • 2 Tsp salt
  • 400g shrimps, frozen
  • 400g mixed seafood, frozen
  • 1 Cup mussels with shells, washed
  • Juice of 1 lemon

Directions

Step 1

In a large pan, heat oil and fry onions and garlic and green pepper, then add capsicums, chopped tomatoes, green peas and 1 cup of the stock. Simmer.

Step 2

Add the rice, saffron, paprika and salt. Combine well. Add the rest of the stock and cook until the rice is almost done.

Step 3

Add shrimps, mixed seafood, mussels and the lemon juice. Combine one last time very well, lower the heat and cook around 10 - 15 minutes (till the water evaporates).
