Lemon Thyme Roasted Chicken

A festive recipe that can be enjoyed on occasions and large gatherings!


  • 1 Whole chicken, rinsed
  • 1 Lemon, cut in wedges
  • 1 Lemon, cut in slices
  • 4 -6 Garlic cloves
  • Handful of fresh thyme leaves, washed
  • 3 Tbsp Al Wadi Al Akhdar extra virgin olive oil
  • 1 Tbsp dried thyme
  • 1 Tbsp sumac
  • Salt and pepper, to taste
  • 1/4 Cup of water
  • 1/4 Cup of Al Wadi Al Akhdar apple vinegar
  • 1 Bag of Al Wadi Al Akhdar frozen bell pepper mix

Step 1

Preheat oven to 200ºC.

Step 2

Brush the chicken with olive oil and sprinkle with salt, pepper, thyme and sumac. Stuff the chicken with lemon wedges, fresh thyme and 2 cloves of garlic.

Step 3

Arrange the lemon slices in a roasting pan and place the chicken on the top. Add apple vinegar, water and remaining garlic cloves and cover the chicken with foil. Place the pan in the oven and roast for about 30 minutes.

Step 4

Remove the foil and scatter the bell pepper around the chicken. Drizzle the peppers with olive oil and continue to cook uncovered for another 30 minutes or until the chicken is fully cooked.
