Freekeh with Chicken
A nutritional main dish enjoyed in the Middle East and Africa


  • 250g Freekeh
  • 1 Large onion, chopped
  • 1 Tbsp Al Wadi Al Akhdar butter
  • 1 Tsp salt
  • 1 Tsp pepper
  • 1 Cup Al Wadi Al Akhdar chick peas, canned
  • 1 Cup chicken stock

  • For the chicken
  • 1/2 Kg chicken
  • Cinnamon sticks
  • 1 Large onion, chopped
  • 1L water
  • 1 Tbsp salt
  • Bay Leaves

Step 1

The chicken: In a large pot, put together the water, the chicken, bay leaves, cinnamon sticks, and salt.

Step 2

Bring to a boil. Lower the heat and simmer, skimming off the foam that forms on the surface of the liquid.

Step 3

Leave it until the chicken is cooked.

Step 4

Remove chicken and strain the stock.

Step 5

Freekeh: In a large pot, heat the butter. Add the onions and cook until golden.

Step 6

Add the freekeh and spices, stirring a little.

Step 7

Add the chick peas, salt and chicken stock.

Step 8

Bring to boil then lower the heat and simmer for 20 minutes (until water evaporates).

Step 9

Serve with chicken pieces.
