Vietnamese Spring Rolls

Vietnamese Spring Rolls
    Transparent rice rolls stuffed with Al Wadi Asian mix for an easy starter.

    Ingredients

    • 1 Tbsp vegetable oil
    • 2 Cups Al Wadi Al Akhdar Asian mix, thawed
    • ½ Tsp salt
    • 8 Spring roll wrappers or rice papers
    • 2 Cucumbers, cut finely in length (julienne)
    • 4 Tbsp fresh coriander, roughly chopped
    • 1 Tbsp Soy sauce
    • Peanut Butter spread

    Step 1

    In a skillet heat oil and sauté Al Wadi Al Akhdar Asian mix for about 5 minutes. Season with salt and leave aside to cool down.

    Step 2

    Add cucumber and coriander to the vegetables mixture and drizzle with soy sauce.

    Step 3

    If using rice paper, soak each one in warm water quickly and place it on a flat surface for filling. Spoon the filling inside and roll like a cigar.

    Step 4

    Serve with peanut butter spread
