Vietnamese Spring Rolls2015-07-20

- 1 Tbsp vegetable oil
- 2 Cups Al Wadi Al Akhdar Asian mix, thawed
- ½ Tsp salt
- 8 Spring roll wrappers or rice papers
- 2 Cucumbers, cut finely in length (julienne)
- 4 Tbsp fresh coriander, roughly chopped
- 1 Tbsp Soy sauce
- Peanut Butter spread
In a skillet heat oil and sauté Al Wadi Al Akhdar Asian mix for about 5 minutes. Season with salt and leave aside to cool down.
Add cucumber and coriander to the vegetables mixture and drizzle with soy sauce.
If using rice paper, soak each one in warm water quickly and place it on a flat surface for filling. Spoon the filling inside and roll like a cigar.
Serve with peanut butter spread
