Parmesan Asparagus Fingers2016-12-20

- 4 sheets, pack Al Wadi Al Akhdar Filo Sheets, thawed
- 1 cup (150 g) Parmesan cheese, grated
- 1 stick (110 g) Al Wadi Al Akhdar Butter, melted
- 18 pcs fresh asparagus spears or Al Wadi Al Akhdar Frozen Asparagus
Preheat oven to 180⁰C.
Unfold the filo sheets and cover with a damp clean towel until ready to use.
Remove one sheet of filo and put on a work surface. Brush the entire sheet with butter and put another sheet of filo on top. Fold crosswise.
Cut the sheet in order to have 3 even size rectangles.
Sprinkle each filo strip with parmesan cheese and place 1 asparagus spear on each sheet.
Wind each filo sheet around the asparagus leaving the sides of the spear showing off.
Repeat until all the asparagus is rolled up.
Place the asparagus fingers on the baking sheer lined with baking paper and brush the tops with butter and sprinkle with parmesan.
Bake for 15-20 mins until the filo is lightly golden.
Serve with mayo sauce.
