Filo Cups with Soy Falafel & Mashed Avocado2015-07-20

- 3 boxes Al Wadi Al Akhdar soy falafel
- Vegetable oil, for frying
- Filo sheets, cut in 10x10cm square
- 3 Large soft-ripe avocados, washed and peeled
- 3 Tbsp fresh lime juice
- 1 Tsp salt
- 2 Cups Cheddar Cheese
- 2 Cups Mozzarella Cheese
- Jalapeno, sliced (optional)
- 2 Cups fresh tomatoes, diced
Grease cup cake tins with butter.
Line up your sheets on a work surface and brush with butter.
Press carefully each square into one hole of the tin and repeat until all of the trays are filled.
Bake in the oven for approximately 15 -20 minutes. Cook soy falafel according to package directions and let cool.
Slice the avocados and mash with a fork in a small bowl, add lime juice and salt, mix well and set aside.
To assemble, spoon in each filo cup 1 tablespoon of cheddar cheese, 1 tablespoon of mozzarella cheese, 1 to 2 slices of jalapeno, 1 tablespoon of tomato and 1 to 2 tablespoons of avocado mixture.
Top with soy falafel and serve.
