Blinis With Ricotta Cheese, Walnuts And Pomegranate Glaze

A great party dish, drizzled with the flavorful pomegranate glaze.


  • 1 ½ Cup plain flour
  • 2 Tbsp sugar
  • 1 ½ Cup milk, lukewarm
  • 1 Egg yolk
  • 1 ½ Tbsp active dried yeast
  • 2 Eggs white, whisked to form stiff peaks
  • ½ Tbsp salt
  • Vegetable oil, for frying
  • 225g Ricotta cheese
  • 24 Walnuts pieces
  • Al Wadi Al Akhdar pomegranate glaze, to drizzle

Step 1

To make the blini: in a bowl combine the flour, sugar, salt, milk, egg yolk and yeast to make a paste.

Step 2

Fold the whisked egg whites into the yeast mixture. Cover the bowl with a damp towel and let it rest at room temperature for 30 minutes.

Step 3

Cook the blinis in a special little frying pan in the same way as pancakes. Allow to cool.

Step 4

Pipe ricotta on each blini, top it with a walnut and drizzle with pomegranate glaze and serve.
