- The dough:
- 900g Semolina
- 150g Of ferkha
- 450g Of Al Wadi Al Akhdar butter, melted
- 125ml Of Al Wadi Al Akhdar rose water
- 50ml Of Al Wadi Al Akhdar orange blossom water
- 150g Of caster sugar
- Date filling:
- 250g Dates, pitted
- 1 Bsp butter, melted
- 1/4 Tsp nutmeg
Sift semolina and ferkha together.
Add melted butter and rub with hands until well combined.
Slowly add warm orange blossom water and rose water, kneading and working the dough gently. Place the dough in a deep container and cover with a wet kitchen towel. Let it sit for 7 hours. Dough should be knead a couple of times during this time.
To make the filling, combine all ingredients (you can use a food processor).
Divide the dough in 2 and roll out each half in a long thin snake like form. Cut circles of 1 inch each, flatten it on the palm of your hand, fill it with dates and make a ball. Repeat this step until you finish the dough.
Press each ball into a traditional “Maamoul” mold to take shape and place it on the baking sheet. If the dough is sticky, lightly flour the mold.
In a preheated oven 200C/400F bake the maamoul cookies for about 20 minutes or until the sides are slightly golden. Cool then sprinkle with powdered sugar and serve.
