Foul Mudammas
Middle Eastern recipe of cooked broad beans with olive oil and parsley.

Ingredients

  • 2 x 400g Al Wadi Al Akhdar foul mudammas(broad beans), drained
  • 1 cup lemon juice
  • 1 cup Al Wadi Al Akhdar extra virgin olive oil
  • 4 cloves of garlic, crushed
  • 4 tbsp parsley, chopped
  • Salt & Pepper

Step 1

Put the broad beans in a salad bowl. Mix all the dressing ingredients, lemon juice, olive oil, garlic, salt, pepper and parsley and drizzle over the beans.

Step 2

Taste and adjust seasoning if desired.

Serve warm with spring onions and Arabic bread.
